
The first recipe from the Oscars Night Dinner is based on the film that won best Art Direction, Cinematography and Visual Effects: Avatar. The Na'vi, the indeginous people of the planet Pandora where the movie is set are blue. Blue is a difficult color to find in food, besides the obvious blueberries. However, after searching ideas from all over the web, I decided blue cheese would be the tastiest. I found a recipe for blue cheese crostini on Epicurious.com and thought they sounded delicious!
These were the simplest crostini with very few ingredients, and the combination of honey and cheese are surprisingly wonderful together. I substituted walnuts for the hazelnuts called for in the original recipe and also chose to cook the cheese with the bread instead of simply topping the hot bread with cheese.
Crostini with Blue Cheese, Honey and Walnuts
- 1 French Baguette
- 1 T extra virigin olive oil
- ~8 ounces (or 1 tub pre-crumbled) of blue cheese (I used Gorgonzola)
- 1 C walnuts
- Honey for drizzling
Slice baguette at an angle into 1/3'' slices. Brush each slice with olive oil and place on a baking sheet in a single layer. Bake for approximately 6-8 minutes.
While bread is baking, heat a small skillet to medium heat and toast walnuts for 2-3 minutes, just to release the oils. Remove from heat and given walnuts a coarse chop. Combine with blue cheese and mix well.
Remove bread and top each slice with a heaping spoonful of the cheese and nut mixture. Place back in the oven for 8-10 more minutes, or until cheese has melted slightly. Remove from oven and drizzle tops with honey.
