Heart Healthy Molasses Muffins

They are finally here! These muffins are just sweet enough but pack enough fiber to qualify as heart healthy. I used blackstrap molasses, a seriously nutrient dense food, as my sweetener along with a little the white sugar the original recipe called for. I also substituted part of the white flour with oats and the result is a substantial, even hearty, muffin that can keep those hunger cravings at bay for sure until your mid-morning snack! You could also add dried fruit or even top with brown sugar for more of a coffee cake-like muffin. They're best hot out of the oven with a little pat of butter.




Blackstrap Molasses Muffins
  • 3T melted butter or other flavorless oil (honestly, this amount of butter is so small and makes such a nice addition to the muffins that substituting oil for less saturated fat really isn't going to make much of a difference health wise!)
  • 1 1/2 C all purpose flour
  • 1/2 C oats
  • 3 tsp baking powder
  • 2 eggs
  • 1/4 C white sugar
  • 1/4 C blackstrap molasses (BLACKSTRAP is important! Check out the Foodista link below on more about the nutritional benefits of molasses)

Preheat oven to 400F. Line muffin tins or butter generously. 

Mix together dry ingredients (Flour through baking powder). Beat together eggs, sugar, molasses, melted butter and sugar.  Create a hole in the middle of the dry ingredients and slowly pour the wet ingredients in. Mix until all dry ingredients are moistened. DO NOT over mix!

Fill each muffin hole 3/4 full with batter. Bake at 400 for 15-20 minutes, or until a toothpick inserted into the middle of a muffin comes out clean.

  2. Thank you very much!! My grandmother makes these really awesome oatmeal cookies so I thought, why not use oats in muffins? I really appreciate the photo compliment too! I'm just starting out with photography, and that is very reassuring to hear :)
